George Descombes Régnié, 2021 apples master distiller at The DublinMade from Gamay grown organically on granite soils. Fermented semi carbonic in concrete tanks, fiberglass, and stainless steel tanks. The wine is made from 40 year old vines, and has a lovely balance of structure and youthful fruit. Pair it with soy braised pork shoulder, served with coconut lime rice and bok choy.
