Der Name Ottoventi (= 8 Winde) leitet sich aus den acht Windrichtungen ab, die teils milde Brise, teils rauh und hart das Klima in diesem Teil der Insel prgen. AUSBAU: Nach einer sanften Pressung der Trauben wird der Most unter kontrollierter Temperatur von rund 25 C with natural mit natrlichen Hefen vergoren. Es folgt eine malolaktische Grung
